If you want to Slow Cook or Steam Roast, you wouldn’t use the mat. It is not for liquids. After you sear your meat and you want to use creamed soups or sauces and have it finish cooking in a sauce or liquid, you wouldn’t use the mat.

I have the set from QVC which is 1 large and 2 medium (Measurements: Large 11" x 16"; Medium 8" x 11") + the one I purchased from Bed Bath and Beyond. I cut it to fit the Ninja, and use the left over piece to place my lid when I take it off. You can also use it as a trivet, pot holder, drying rack, as a non-slip surface to place your cutting board, and to grip a jar lid to twist open.

When I use the cut to fit, I usually place my baking pan on it so there is no metal to metal contact. Because of the pyramids, heat will circulate and foods will cook and there will be no burning.
I use it for a lot of different frozen foods, so they won’t sit on the bottom of the pot in one position for a prolonged amount of time and possibly burn. It is great for: Browning uncooked chicken breasts, tater tots, French fries, chicken tenderloins, Sister Schubert Yeast dinner Rolls, pizza rolls, egg rolls, chicken nuggets, etc…
You can sear your meats (without the mat) on the bottom of the pot (Stove Top High), or you can place your seasoned meat on the mat, using your Oven setting of 350-425°. You can spray with Pam if desired.
I prefer a good sear on a steak, so I have only used the mat with seasoned chicken breasts, and pork chops.

Baked potatoes, no turning! I don’t normally wrap them in foil. Usually 5-8 potatoes, and I use the larger mat so the mat goes up the sides of the Ninja. That way the skins are not touching the sides and not scorching. I usually use 425° for 1-1.5 hours depending on the size of the potatoes.

Gay Munro - When baking cakes etc, I put my baking pan (the one that came with the Ninja) on top of the mat to elevate the pan from the bottom to prevent burning.
Unless I'm steam baking then the pan goes on the rack & the rack goes on the mat & then water under the rack.

MaryJo Powell.. For all of you who like me have just bought your Ninja - I have a tip. There was a piece of cardboard inside my cooker under the roasting tray. Do not throw that out - it is a perfect size to either take shopping with you to see if a pan will fit -- or I just used mine as a template to cut my pyramid sheet - it fits perfectly.

**Foods to Cook on the Pyramid Pan**

What is it? A fat-reducing silicone cooking mat
What does it claim? That the 556 non-stick silicone pyramids allow fat to drip away and air to circulate under the food leaving it crispy, juicy and evenly cooked.
What Are The Instructions? Before your first use, wash Pyramid Pan thoroughly in warm, soapy water. Then rinse and dry it.
The makers say the pan may produce a small amount of smoke during the first few uses at temperatures about 350 degrees, but it will decrease over time. We didn't experience that, however.
The cooking mat insert can be used with a baking sheet or pan. Since it's silicone and flexible, that makes it easier and more sturdy to use.
Pre-heat your oven to temperature you need, but do not exceed temperatures of more than 428° degrees in a conventional oven. It's important to note that you may need to increase recipe temperatures by 25 degrees when using the Pyramid Pan.
Keep in mind that foods may need longer cooking times than with traditional baking sheets.
Once you've placed your Pyramid Pan with the points-side facing up onto a heat-resistant baking pan or sheet, you're ready to get cooking. Place food items on top of "pyramids" and bake according to recipe instructions. If you are looking for crispier results, spray both sides with cooking spray. It can make breaded food crispy without having it sit in oil.
It's important to note that Pyramid Pan should never be used on a stove top, under the broiler, on a hotplate or over an open flame. It can be used in the microwave.
It is super easy clean up. You could roll it up and it takes up very little storage space in your kitchen.

Additional Comments:
Because the Pyramid Pan allows air to circulate around food, you don't need to flip food as frequently. It's non-stick surface makes clean-up easy and you can hand wash with warm soapy water or place it in the dishwasher.

I've just been struggling to take the lid off a new jar of pickles, then I remembered I'd bought a Pyramid Mat and cut to size for the bottom of my Ninja. I wrapped that around the stubborn lid, and then tried to open it, and it came off with very little effort!
