Chicken Stuffed Tortillas with Peppers & Corn

Serves: Makes 24 tortillas
Ingredients:
4 ounces cream cheese, room temperature
2½ cups grated Cheddar cheese
2 cups shredded cooked chicken
½ cup roasted peppers, diced
1 cup corn kernels (fresh or frozen)
1 minced Jalapeño pepper, seeds removed
3 scallions, chopped
salt and freshly ground black pepper
12 (8-inch) flour tortillas
¼ cup canola or olive oil
1 teaspoon chili powder
salsa (optional)
Directions:
Combine the cream cheese and cheddar cheese in a bowl. Fold in the shredded chicken, roasted peppers, corn and scallions and season the mixture with salt and freshly ground black pepper.
In a second small bowl, mix the oil and chili powder together and set aside.
Cut the tortillas in half. Make one stuffed tortilla at a time. Start by rolling one half tortilla into a cone. While holding the cone in one hand, fill it with 2 tablespoons of the chicken and cheese mixture. Push the filling down into the bottom of the cone, leaving ½ inch of the cone empty at the top. Gently squeeze the cone to slightly flatten the cone into a puffed triangle. Lay the stuffed tortilla triangle seam-side down on a sheet tray or cutting board. Repeat with the remaining ingredients. Brush each one with the chili oil.
Pre-heat air fryer to 370°F.
In batches, air-fry the tortillas for 6 to 7 minutes until the tortillas are lightly browned and the filling is heated through.
Before serving, stack all the stuffed tortillas back into the air fryer and air-fry at 330°F for about 3 minutes to warm them all up.
Serve warm, with salsa.

Grands Biscuits - so big biscuits 360°F, 5 minutes then flipped and 5 more minutes. The second batch was only 2 biscuits and they went much faster and I didn't even need to flip after about 8 minutes they were done!
It’s the 5.3 CE so I fit 6 in first batch.

Pork Sandwich
Dredge in seasoned flour first, then dip into egg wash and lastly into bread crumbs making sure to press them
on REALLY WELL! after you get them coated put them in the freezer for about 15mins (this helps the coating to stick to the meat while its air frying) after you take them out of the freezer spray/spritz/brush both sides of the meat with oil, making sure everywhere that has flour has oil on it as well (that helps the meat crisp and brown nicely) cook at 370°F, for about 8 minutes then flip over (you can respray/respritz/rebrush the top side of the meat again once you flip it if you want) then cook for an additional 8-10 minutes!
I’ve made country fried steak, pork chops and chicken tenders all using this method and they turned out nice crispy and browned well every time!

Ingredients:
2 Boneless/Skinless Chicken Breasts pounded
½ cup Dill Pickle Juice
2 Eggs
½ cup Milk
1 cup All Purpose Flour
2 Tablespoons Powdered Sugar
1 teaspoon Paprika
1 teaspoon Sea Salt
½ teaspoon Freshly Ground Black Pepper
½ teaspoon Garlic Powder
¼ teaspoon Celery Seed ground
1 Tablespoon Olive Oil extra virgin
1 Oil Mister
4 Hamburger Buns toasted/buttered
8 Dill Pickle Chips or more
Spicy Option:
¼ teaspoon Cayenne Pepper for spicy sandwiches
Instructions:
Place chicken into a Ziploc Baggie and pound, so that the whole piece is the same thickness, about ½ inch thick.
Cut chicken into two or three pieces (depending on size).
Place chicken back into Ziploc baggie and pour in pickle juice. Marinate in the refrigerator for at least 30 minutes.
In a medium bowl, beat egg with the milk.
In another bowl, combine flour and all spices.
Using tongs, coat chicken with egg mixture and then into flour mixture, making sure pieces are completely coated. Shake off excess flour.
Spray the bottom of your Air Fryer with Oil.
Place chicken into air fryer and spray the chicken with Oil.
Cook at 340°F, for 6 minutes. Using silicone tongs, carefully flip the chicken and spray with Oil. Cook for 6 more minutes.
Raise the temperature to 400°F, and cook for two minutes on each side.
Serve on buttered and toasted buns, with 2 pickle chips and a small dollop of mayonnaise, if desired.
Recipe Notes
For a touch of a spicy kick, try marinating the chicken in Pepperoncini juice.

I soaked it in buttermilk all day, rolled and pressed flour mixture into chicken. Let it rest so the breaking would start to stiffen. 320 @ 40 minutes turned a couple of times. No oil sprayed on it. I relied on the crisco to do its thing.

Loaded twice baked potatoes in the air fryer...
Washed potatoes and pricked with a fork. Rubbed EVOO all over potato skin. Seasoned with course sea salt, fresh ground pepper. Cook in the air fryer for 40 minutes at 400° Removed from AF, cut off the top portion of the potato and scooped out the inside. Mixed potato with bacon, butter, colby jack cheese S and P, and sour cream. Scooped back into potato skin. Shredded more cheese on top and sprinkled with parsley and paprika. Back in AF for about 5 mins!! Skin was crispy and good!

Pizza rolls – 370°F for 9 minutes; shake every 3 minutes
Use the preheat button spray basket put rolls in spray rolls 400 degrees 5 minutes shake light spritz of oil and another 5 minutes at 400 degrees!!! PERFECT!!!
Frozen pizza!! Totino's. 340°F at 16 minutes!! It is so good!!
Frozen fries? 400°F, for 10 or 12 minutes depending on how crispy you like them.
Mushrooms
I dipped in egg and rolled in a mix of flour and Panko to coat them. Spritz with oil. Froze them for 3 hours and cooked at 400°F, for 8min.

Can of Grands buttermilk biscuits, brushed with a little oil, cooked for 4 (flipped after 2 minutes) minutes @390°F... and we have doughnut holes! I dipped them in melted butter and rolled them in cinnamon and sugar while they were hot. Next time I'm filling them with cream cheese frosting.

Stacy Ridel A tube of biscuits, flattened slightly, cookie cutter a hole in the middle then pop in AF at 300° for 5-6 minutes. Holes take slightly less time, so I did those last by themselves. Brush on a little melted butter and dip in cinnamon sugar mixture.
Gail Oldfield I got the recipe from this site. Dip chicken in egg, dredge in seasoned flour, spritz with oil and put in fridge for 20 mins. Cook at 360 degrees for 15 mins, turn over and cook for 10 mins. Turn-over and cook at 400°F, for 6 mins. I had to cook about 10 mins as they were thick thighs. Check with temp, should be 175°F. It's in a box in the aisle with flour/sugar and stuff at Walmart.

9 ounce fillet steak and homemade chips cooked in my Air Fryer (Philips Air fryer). Onions and the mushrooms in a pan with a beef OXO cube.
Steak 200C for 14 mins (as it was an inch thick), chips 200C for 20 mins (sprayed with olive oil). Steak was medium throughout, just the way I like it.

Pork steak
For a thin pork chop the recipe had it 6 minutes at 330, flip, 3 minutes at 330 and then a final minute at 400.
For the two steaks, I did the 6 + 3 at 330 and then 6 (3 and flip) at 400.

Think it was 360 and I can't really remember the time. Think I did it for around 10 mins on one side, flipped and cooked for another 5 mins. Check temperature and then cooked little longer until it was correct temperature.

Ooooooh yum! Chicken Air-Fried Steaks in the house!! Cubed steaks dipped in egg/milk, then KK Seasoned Flour, spritzed with oil, then air fried at 400 degrees for 9-10 minutes flipping once halfway. Gravy is McCormick country gravy mix. So good.

Pork steak about 360 degrees for 25 minutes flipping half way through!

BEEF?
I made them with beef cube steaks about 7 min each side at 360. I used a thermometer and only made one at a time in my Nuwave Brio 3qt cause it's small. I used Kentucky kernel, dipped in egg & milk mixture then back in Kentucky kernel. Then dabbed olive oil sparingly with a silicone brush to make sure there was no dry flour (I don't have a sprayer). Then put them in the fridge for about 45 min before cooking so the breading would setup. They were so good!

Stacy Ridel A tube of biscuits, flattened slightly, cookie cutter a hole in the middle then pop in AF at 300° for 5-6 minutes. Holes take slightly less time, so I did those last by themselves. Brush on a little melted butter and dip in cinnamon sugar mixture.
Gail Oldfield I got the recipe from this site. Dip chicken in egg, dredge in seasoned flour, spritz with oil and put in fridge for 20 mins. Cook at 360 degrees for 15 mins, turn over and cook for 10 mins. Turn-over and cook at 400°F, for 6 mins. I had to cook about 10 mins as they were thick thighs. Check with temp, should be 175°F. It's in a box in the aisle with flour/sugar and stuff at Walmart.

Another air fryer creation. Turkey breast cooked on 360 20 mins turned half way. used fresh garlic, rosemary, basil and very little season salt rubbed the basket with olive oil using a paper towel.

9 ounce fillet steak and homemade chips cooked in my Air Fryer (Philips Air fryer). Onions and the mushrooms in a pan with a beef OXO cube.
Steak 200C for 14 mins (as it was an inch thick), chips 200C for 20 mins (sprayed with olive oil). Steak was medium throughout, just the way I like it.

Pork steak
For a thin pork chop the recipe had it 6 minutes at 330, flip, 3 minutes at 330 and then a final minute at 400.
For the two steaks, I did the 6 + 3 at 330 and then 6 (3 and flip) at 400.

Think it was 360 and I can't really remember the time. Think I did it for around 10 mins on one side, flipped and cooked for another 5 mins. Check temperature and then cooked little longer until it was correct temperature.

Ooooooh yum! Chicken Air-Fried Steaks in the house!! Cubed steaks dipped in egg/milk, then KK Seasoned Flour, spritzed with oil, then air fried at 400 degrees for 9-10 minutes flipping once halfway. Gravy is McCormick country gravy mix. So good.

BEEF?
I made them with beef cube steaks about 7 min each side at 360. I used a thermometer and only made one at a time in my Nuwave Brio 3qt cause it's small. I used Kentucky kernel, dipped in egg & milk mixture then back in Kentucky kernel. Then dabbed olive oil sparingly with a silicone brush to make sure there was no dry flour (I don't have a sprayer). Then put them in the fridge for about 45 min before cooking so the breading would setup. They were so good!
